(Tâches et activités)

  1. S’assurer de la bonne tenue de la cuisine
  2. Préparer les matières premières alimentaires : laver, éplucher, couper, cuire, etc…
  3. Réaliser les plats et recettes à partir de fiches techniques et contrôler la qualité sanitaire et gustative des préparations.
  4. Réaliser l'assemblage et le dressage des hors-d'œuvre et des desserts.
  5. Rechercher et mettre en œuvre de nouveaux plats, nouvelles denrées ou procédés de fabrication permettant d'améliorer la prestation.

  7. Organiser le travail au sein de la cuisine dans le respect des règles en

vigueur

  1. Diplôme                      : Niveau 3è ou BT en cuisine
  2. Expériences                  : 2 à 3 ans d'expériences en cuisine
  3. Autres connaissances : Maîtriser les attentes et les besoins nutritionnels des enfants, Connaître les principes de nettoyage et de désinfection.
  4. Qualités requises : Etre concentré et attentif. Savoir organiser son temps. Etre organisé et méthodique. Etre capable de s'adapter aux changements de rythme dans le travail quotidien. Etre rigoureux (notamment dans le respect des règles d'hygiène et de sécurité alimentaire). Etre efficace, réactif et créatif.
